AMSA Announces SALUMI 101 Course for February 2018

Registration for SALUMI 101 will be launched soon, so mark your calendars as space will be limited! A unique three-day, hands-on educational opportunity for all attendees, SALUMI 101 will be held 21–23 Feb. 2018 at North Carolina State University in Raleigh, NC. It is sponsored by AMSA, North Carolina State University, and California State University–Fresno.

“Salumi 101 is great for trained chefs and serious cured meat processors alike,” states one past attendee. “The equal time between hands-on training and in-depth classroom curriculum was fantastic. I thoroughly enjoyed all the teachers and staff.”

Anyone with a passion for learning more about the art and science of crafting high quality artisan meat products will benefit from attending SALUMI 101. This class will provide the opportunity to interact with industry and university professionals who specialize in this area of meat science. Participants will learn about the production of safe and high quality artisan-style meat products as well as be involved with the crafting of various artisan products. AMSA Educational Webinar Series

AMSA launched its Educational Webinar series three years ago and has hosted more than 60 informative webinars to date. These webinars provide information on current issues within our industry, professional development training, and career development resources. Tyson Beyond Fresh—Processed Meat Short Course

AMSA is excited to partner with Tyson Foods to host the second annual “Beyond Fresh Meats Short Course.” The short course will be held at Tyson Foods in Downers Grove, IL on 2–4 Feb. 2018. This year's course will focus on both ground and emulsified sausage product development and will include topics on raw meat processing, dry ingredient functionality, developing formulations, controlling quality, and food safety. Students will work with academic peers and industry professionals and receive hands-on experience in Tyson's state-of-the-art industry pilot plant and test kitchen facilities utilizing the content covered in lectures.
